This species, that originated in the Eastern Mediterranean, is widely bred in order to be used in salads. It is low in calories and is a good source of fibre and vitamins A and K. There are several types of lettuce characterised by the degree of formation of the core and the size and shape of the leaves. The leaves can be smooth or frizzy and may have a green, purple or reddish colour.
