Aubergine Solanum melongena Solanaceae
Also known as eggplant or brinjal, this plant species native to Asia, stands out for its lustrous skin colour, which can be purple, orange, red, lilac, yellow or white. The purple colour derives from the presence of nasunin, a compound that has antioxidant properties. The shape varies between oval, round and elongated. Aubergine is harvested and consumed before ripeness. Once ripe it becomes bitter and the pulp is excessively spongy.
