Beetroot

Beta vulgaris subsp. vulgaris var. conditiva Amaranthaceae

Domesticated in the Middle East, it is known for its intense purple-red colour, attributed to the betanin pigment. Beetroot has great nutritional interest because it is an excellent source of iron, fibre, manganese, potassium, folic acid, carotenoids and vitamins C and B9. It also contains betaine, an amino acid that has beneficial properties for the liver and cardiovascular health.
