Carrot Daucus carota subsp. sativus Apiaceae
This edible root, that was first domesticated in Central Asia, is typically orange in colour, but there are also yellow, red, purple, black and white varieties. Carrots are rich in vitamins, fibre and beta-carotene, a precursor to vitamin A that is beneficial for the retina, prevents eye disease and improves vision. Cooking carrots increases the absorption of beta-carotene during digestion.
