Spinach Spinacia oleracea Amaranthaceae
Native to Central Asia, spinach is a creeping plant whose leaves are edible. Depending on the varieties, the leaves can measure between 2 and 30 cm in length and 1 and 15 cm in width, with larger leaves at the base and smaller ones at the top of the plant. It is valued for its high content of vitamins A, C and K, folic acid, magnesium, manganese and iron.
