First domesticated in Southern Mexico, this cereal is one of the most highly cultivated and consumed crops in the world, with thousands of varieties. It produces an ear, halfway up the plant. Depending on the variety, the grains can be yellow, red, brown, white, black or blue. Maize has multiple uses, including as a foodstuff and for the production of animal feed, biofuels, plastics, fabrics and chemical products.
